An industrial pasteurizer is designed to significantly reduce the microbial load on nuts. It targets total plate count, pathogenic bacteria such as Salmonella and E. coli, as well as yeasts and molds, while preserving the product’s natural color, texture, and flavor. After treatment, the product remains visually almost unchanged.

In contrast, a nut roaster is used to develop flavor and color through controlled heat treatment. The process transforms the product, resulting in a darker color, a crunchy texture, and enhanced roasted taste.

Our system combines both technologies in a single solution. It allows you to run pasteurization only, or to combine pasteurization and roasting in one integrated process. This means you benefit from two applications within a single machine.

Our system operates in continuous mode, unlike many conventional machines that rely on batch processing. This allows for a smoother and more stable production flow, making daily operations easier, more consistent, and less dependent on manual intervention. As a result, fewer operators are required, which improves both product consistency and overall production costs.

The system is fully automated: the operator simply selects a recipe, and all process parameters are automatically adjusted. This reduces human error, improves repeatability, and significantly enhances food safety standards.

In addition, our technology does not use natural gas, which greatly reduces fire risk and simplifies plant safety requirements. It is powered exclusively by electricity, making it a safer and more environmentally friendly solution compared to traditional roasting systems.

Yes — our system is versatile. The same continuous line can treat a wide range of nuts, including almonds, cashews and pistachios. You can pasteurize only, using a small amount of steam at low temperature to preserve the nuts’ natural flavor, color and texture (organoleptic properties). Or you can pasteurize and roast in a single pass by simply increasing the temperature and residence time.

Yes — pasteurization and roasting happen simultaneously, in a single pass through the same Revtech heat treatment tower. Depending on your settings, the process can deliver up to a 5-log reduction of Salmonella while roasting the product to your target color and flavor.
